A delicious recipe submitted by Fresh Harvest customer, Sheila!
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ¾ teaspoon salt (I use kosher salt)
- 3 large eggs
- 1 1/3 cups sugar
- Grated zest of 1 lemon
- ¾ cup Fresh Harvest Eureka Lemon Olive Oil
- ¾ cup whole milk
Preheat oven to 350 degrees
Line the bottom of a 9” springform cake pan with parchment round and spray sides and paper with baking spray. (Or brush a 9” cake pan with Lemon olive oil)
Whisk flour, baking powder and salt in a small bowl and set aside.
Using electric mixer, beat eggs until foamy.
Add sugar and beat until light and fluffy.
Add lemon zest and combine.
With mixer running slowly drizzle olive oil and mix to completely combine.
Add approximately 1/3 of the flour mixture and on low speed, just combine.
Continue to add remaining flour mixture.
Scrape into prepared pan and bake 45- 50 minutes
Cool in pan 20 minutes then remove sides and cool completely.
Sprinkle with powdered sugar for service.
