Made with hand-picked Trebbiano, Albana and Montuni grapes to maximize the Brix content in the grapes, this true Italian balsamic condiment is among the finest in the world. The grapes are left to dry in the Sun for up to 15 days – an exclusive family practice of our balsamic maker in Modena, Italy. The resulting grape must is cooked and lightly filtered and aged in White Oak barrels for a minimum of 12 years. The resulting White Balsamic has a 4% acidity and a 1.28 density.
