Super concentrated! Our Fused, early harvest Chilean green Lemonato was made by crushing very green Arbequina olives with green Eureka Lemons.  The result is an incredibly complex, pungent fusion. The green lemon aroma is powerful in this fragrant and floral oil. A little goes a long way, and it makes amazing dressings, sauces, and marinades, has a high smoke point, and is extremely versatile.

My introduction to Fresh Harvest Olive Oils and Balsamic Vinegars was through the Local Flavor restaurant in Eureka Springs. I have been a big fan since then, and during a return visit this weekend to Eureka Springs, I had to stop in and purchase more. Make a visit to the shop and ask the staff for their oil/vinegar pairings for different types of cuisines, and then take a taste of the mix. Your taste buds will thank you! (And then buy some, you won't regret it!) P.S. They have excellent recipes on their website!
