The flavor of olive wood smoke is close to that of Oak.  In Spain, Olivewood is commonly used for grilling fish, poultry, meats, and vegetables. My introduction to Fresh Harvest Olive Oils and Balsamic Vinegars was through the Local Flavor restaurant in Eureka Springs. I have been a big fan since then, and during a return visit this weekend to Eureka Springs, I had to stop in and purchase more. Make a visit to the shop and ask the staff for their oil/vinegar pairings for different types of cuisines, and then take a taste of the mix. Your taste buds will thank you! (And then buy some, you won't regret it!) P.S. They have excellent recipes on their website!
