One of the most enduring myths about extra virgin olive oil is that if you heat it then it will produce more free radicals (and is therefore be more ‘toxic’ – or more appropriately ‘detrimental to your long term health’) than other edible oils…..this is not true. In fact, olive oil is the best oil to cook with!
