Ingredients:
- 3 Cooked Chicken Breasts (see our Tuscan Olive Oil Chicken recipe at our recipe blog – FreshHarvest.co)
- 2-3 Large Heirloom Tomatoes – cut into 1” bites
- 2 English Cucumbers – halved and sliced
- ½ Onion – thinly sliced
- 6 Fresh Radishes – thinly sliced
- 1/3 cup of Kalamata Olives – coarsely chopped
- ¼ cup of Fresh Basil – chiffonade cut
- ¼ cup of Fresh Parsley – coarsely chopped
- Flake Salt and Fresh Cracked Pepper (to taste)
- ¼ cup of Fresh Harvest Gremolata EVOO
- ¼ cup of Fresh Harvest Premium White Balsamic
After cooking Tuscan Olive Oil chicken breasts, allow to cool. Cut chicken into bite sized pieces. Toss all ingredients together in a large bowl. Whisk together the Gremolata EVOO and Premium White Balsamic. Pour over salad, toss and serve.
