Ingredients:

  • 3 Cooked Chicken Breasts (see our Tuscan Olive Oil Chicken recipe at our recipe blog – FreshHarvest.co)
  • 2-3 Large Heirloom Tomatoes – cut into 1” bites
  • 2 English Cucumbers – halved and sliced
  • ½ Onion – thinly sliced
  • 6 Fresh Radishes – thinly sliced
  • 1/3 cup of Kalamata Olives – coarsely chopped
  • ¼ cup of Fresh Basil – chiffonade cut
  • ¼ cup of Fresh Parsley – coarsely chopped
  • Flake Salt and Fresh Cracked Pepper (to taste)
  • ¼ cup of Fresh Harvest Gremolata EVOO
  • ¼ cup of Fresh Harvest Premium White Balsamic


After cooking Tuscan Olive Oil chicken breasts, allow to cool. Cut chicken into bite sized pieces. Toss all ingredients together in a large bowl. Whisk together the Gremolata EVOO and Premium White Balsamic. Pour over salad, toss and serve.
